Food

Traditional dishes

The Hong-Kong cuisine is a Chinese cuisine with some specialties:
The hundred-years eggs: a popular dish which is sought-after in Hong-Kong's food. Eggs are left during two months, or more, in a rich lime mud mixture, tea, ash and bicarbonate of soda. Their flesh becomes translucent, of a green-bluish color. They are often served as a hors d'oeuvre.
Spring rolls: small stuffed rice pancakes-like. The stuffing depends on available ingredients, food trends of the moment, tastes etc. As a matter of fact, it can be adapted, from the most simple to the most elaborated stuffing.
Spareribs in black beans sauce : pork based dish, very tasty, and poor in fat. The red hot peppers are optional, depending on the preference for spicy dishes or not. It is usually served with white rice.
